Morihei Hishiboshi Hi 1000 is a Japanese whetstone with a medium grit, intended for the daily maintenance of kitchen knives, especially those made of high-carbon steel. The #1000 grit effectively restores the working sharpness and prepares the blade for further finishing on higher-grit stones.
The stone belongs to the Morihei Hi (Hishiboshi) series, which was developed to replicate the properties of Japanese Natural Stones (JNAT). Thanks to its partial content of natural stone powder, the stone offers very good sharpening feedback and uniform, predictable abrasion. During use, a sharpening slurry is created, which significantly improves sharpening efficiency—it should not be removed during the process.
This model is a typical “splash & go” stone, which means it is ready to use after being moistened with water—it does not require long soaking. However, for increased comfort and to “open up” the working surface, you can lightly soak it for 1–2 minutes or rub it with a Nagura stone or a flattening plate. The stone remains stable during use and shows no tendency to wear down quickly.
Compared to stones from other manufacturers (e.g., Naniwa, Shapton), the Morihei Hishiboshi Hi stands out with its slightly greater thickness (25 mm), which translates into a longer lifespan.
